Ingredients:
1 poblano chili,
1/4 cup light mayonnaise,
1 1/2 tsp grated lemon zest,
1 tsp lemon juice,
3/4 lb lean ground chuck,
1/2 lb dried chorizo sausage finely chopped,
1 large tomato, cut into 4 slices.
4 slices sourdough bread, cut from a large round loaf.
1 cup shredded Manchego cheese,
2 cups frisee lettuce.
Directions:
1. Preheat grill to medium-hot.Grill chili until blackened on all sides,about 10 minutes. Place in a bowl,cover,and let stand until cool.Peel,seed,core,and chop chili.
2. In a bowl,combine mayonnaise, lemon zest, and juice.
3. Crumble beef chuck into a large bowl.Add chorizo and chopped chili. Mix gently but thoroughly,until combined.Shape into burgers with BurgerMate.
4. Grill burgers 4 minutes per side, or until medium-rare. Grill tomato slices until hot, about 1 minute per side. Sprinkle bread slices evenly with cheese and carefully transfer to grill rack. Grill covered until underside of bread is toasted and cheese melts.
5. To assemble burgers, cut each slice of bread in half. Place burgers on half of the bread. Spread lemon mayonnaise on burgers, and top each with a tomato slice and frisee. Top with the remaining bread, cheese side down.
