Ingredients:
9 plum tomatoes
1 tablespoon olive oil
fresh ground black pepper
salt
3 pounds ground beef
6 thin slices panchetta
6 brioche rolls,split
6 ounces gorgonzola cheese,crumbled
Directions:
1. To make Roasted Tomatoes: Preheat oven to 250°F. Halve tomatoes lengthwise; squeeze to remove seeds.In bowl, toss tomatoes with oil, and pepper and salt to taste. Place cut sides down on sheet pan or cookie sheet. Roast in 250°F oven 3 to 6 hours (depending on moisture content of tomatoes) until shriveled but not dry.Cool;cover and set aside.
2. When tomatoes are nearly done.Lightly shape ground beef into patties using Burger Mate.
3. Place patties on grid over medium, ash-covered coals. Grill, uncovered, 13 to 15 minutes to medium (160°F) doneness, until no longer pink in center and juices show no pink color; turning occasionally.Season with salt and pepper as desired.
4. Meanwhile,increase oven temperature to 400°F.Place pancetta on sheet pan or cookie sheet in oven.Bake at 400°F in oven for 10 to 12 minutes, until crisp.
5. To serve,place three roasted tomato halves on bottom half of warmed brioche roll. Top with burger patty and pancetta slice.Sprinkle 1 ounce cheese over pancetta.Melt under broiler. Remove from heat and cover with roll top to serve.
